Mama's GF Pancakes

I am a traditional girl in some ways, but I also love to mix things up!
For a few years our favorite movie to watch at Christmas was Die Hard...
Hey - the movie takes place at Christmas, has tons of action, and a happy ending - what's not to like!
One of our favorite 'new' traditions is having breakfast for dinner.
It took me awhile to get my husband used to this, but now the whole family is on board!
I have mentioned a few times that my Mom has some great Gluten Free recipes
she has come up with on her own. One of them is her pancake mix.
I can honestly say it makes the best pancakes I have ever had. With or without gluten!
I decided to share it with you today, with my Mom's permission.
She makes up her pancake mix and gives me a new bag of it whenever I run out -
I know, I am spoiled....
She probably won't do the same thing for you though,
So I will put the recipe for the mix and the instructions for the pancakes at the end of the post.
You just add a few basic fresh ingredients to the mix to make the cakes.
Buttermilk, eggs, and oil.
Stir those ingredients in with one cup of the mix, and you are ready to go!
I really think one of the ingredients that makes these so good is the corn flour.
It makes the texture and consistency of the cakes so light
and the outside of the pancake a tiny bit crisp.
Believe me, they are amazing!
And please ignore the look of my griddle, it gets used a lot!!
When I serve breakfast for dinner, I usually include either sausage or bacon.
My manly man doesn't believe it can be a real meal without meat.
I, on the other hand, have no problem just filling up on pancakes!
With a little real butter, some syrup, and whipped cream.......
Just the way nature intended them!
Oh, and strawberries too, of course..
It doesn't matter if you are gluten free or not - these are worth a new pancake mix tradition!
And I bet you won't get any complaints if you serve them for dinner either..
Then afterwards the whole family can watch Die Hard.....or not..

Mama's Gluten Free Pancake Mix
3 cups Potato Starch Flour
3 cups Corn Flour
2 Tbls. Sugar
2 tsp. Zanthan Gum
2 tsp. Salt
2 Tbls. Baking Powder
1 Tbls. Baking Soda
To make pancakes:
1 cup pancake mix
2 eggs
1/4 cup oil
1 - 1 1/2 cups buttermilk
Combine mix, eggs, and oil -
Add buttermilk till desired thickness
Makes about 6 medium pancakes.

Freschetta Pizza review and giveaway!



This past week has been a very hectic one for me.
When you work at a church, Easter is a busy time!
And when your job is running the services, Easter weekend is just insane!
We had over 14,000 people in 6 services last weekend! Sheeshh!! Amazing but busy!
Needless to say, I was tired.. and of course, my guys still think they need to eat even
if I am to tired to cook. What is up with that?? I decided it would be a great time to try
a new Freschetta Simply Inspired pizza. The good people at Freschetta had sent me a
coupon for a free one to try - so I choose a Chicken Bianco one.

The first thing I noticed about it was the packaging. It has far less bulk than most frozen
pizzas. In fact, it slid quite easily into my freezer, which is a side one and therefore
narrow. May not seem like a big issue, but it made me happy!


All of the nutrition and cooking information was easy to find on the back of the package.
And the calorie count for this flavor was not bad at all! One serving was 1/3 of the pizza,
and came in at just 8 Weight Watchers points! Not that I follow those religiously anymore,
but I do use them as a guideline... anyone else love that phrase from Pirates of the Caribbean?!
Anyway... I popped it into the oven, and 14 minutes later I had this deliciousness on my counter!



Mmmm... creamy garlicky cheesy goodness!
The thin crust was just right, slightly crispy and the perfect foundation for the
yummy sauce, chicken, peppers, and spinach.


It was really good - and I must say I am not normally a big fan of frozen pizza.
My husband and son liked it too, even though this flavor was one they wouldn't
ordinarily choose.  Too "frilly and gourmet" for them!
Didn't seem to stop them from gobbling it up though!
The makers of Freschetta Pizza contacted me and provided their product for
me to review, but the opinions and thoughts I have shared here are entirely my own.
I am so thankful to them for giving me a night off from cooking!
